Iranian internationally-known city of Isfahan, AKA half of the world, offers Gaz as one of the many souvenirs it produces.
Gaz is the Iranian variety of nougat that is mainly made in the city and distributed to Iran and also exported to other countries.
Isfahan produces 90 percent of Iran’s Gaz. The nougat was traditionally made of the sap of Tamarisk that is a tree native to Zagros mountain range located to the west of Isfahan.
Gaz is mostly a combination of Tamarisk sap, rose water (Golab in Persian), sugar, egg white, flour, pistachios, and almonds.
