Kashke-Zard: A fast food for chilly days

Kashke-Zard (Yellow Curd) is popular homemade fermented food in Zabol County, Sistan and Baluchestan Province of Iran.

This Iranian plain food gets ready in an hour and acts as a booster, especially during cold wintry days.

The curd used in Kashke-Zard prevents osteoporosis and strengthens gums.

To make Kashke-Zard, combine 250g minced meat, half a teaspoon turmeric, pepper to taste, 1 tablespoon oil, and 2 tablespoons yellow curd powder.

Make small balls of minced meat and fry them in oil. Then, in two glasses of cold water, dissolve two tablespoons of yellow curd powder.

Add half a teaspoon of turmeric, and pepper, and gently heat and stir until thickened.

Finally, pour 1 tablespoon of oil into the pot and bring it to a boil while adding the meatballs. With warm bread, the meal is ready to be served. 

 Kashke-Zard is best served for lunch as it is filling and nutritious.
